Description: Yoshimitsu 好光 Japanese Double Bevel Gyuto Knife 9.5 inch/ 240mm White #2 (Shirogami) Stainless clad Nashiji finish This knife is hand made by a 3rd generation blacksmith, Mr. Jun-ichi Ide of Shimabara, Nagasaki, Japan. The blade was forged from famous Shirogami #2 carbon steel sandwiched by stainless steel and the core will rust easily. Please wash the knife after each use and dry completely. Stainless outer layers have uneven surfaces (Nashiji) for an excellent food release. This knife is fitted with the Japanese octagonal handle made of Walnut with a black Pakkawood ferrule. This is an all round chef’s knife and designed to work on meat, fish and vegetables. If you want only one knife in your kitchen this is it! The knife comes with the original paper gift box. Important: This knife is hand made, and there may be some imperfection as to the appearance. Also the size may be slightly off from this photo. I will accept returns. Maintenance: Just wash the knife and handle with soap and sponge, rinse and dry. If you store it for an extended time, use of oil is necessary to prevent the rust on blade. Warning: The blade core is not a stainless steel, so it will rust unless you dry it right after each use. Warning: Never wash in the dish washer! Warning: The blade is very hard and razor sharp, however, it is also brittle as with most of other Japanese knives. Cutting the bones, frozen food, hard root vegetable, etc, will likely result in chips and breakage. We cannot accept return if the knife has any damages.
