When it is cooked, discard the water. Dilute 0.1g (1/5 tsp) natto starter in 10cc of sterile water. Mix well. Use 1~10ml/0.3 fl oz natto starter solution for 100g/3.5oz soybeans. Before the soybeans cool down, quickly sprinkle natto starter solution and stir well. If the temperature of soybeans drops here, unwanted germs might propagate so be careful. You can use a food warmer such as a rice cooker, pressure cooker, to Yogurt maker to ferment the natto. In case of using container or Yogurt Maker, place a wrap with a few holes to let the oxygen flows freely during fermentation. How to Preserve Natto and Natto Starter? Homemade and moist natto can be refrigerated for 3 days. The flavor will improve after 1-3 days of aging in the fridge.
