We collected only the flower during June & July, its handy grated but in big pieces without the bud in order to reserve freshness and full aroma. The product is carefully sealed into air-proof bags for the best flavoring preservation. You have to grated just before use. Oregano has a broad culinary use flavouring meats, fishes salads and many sauces. Combines well with spicy foods, also can be used for flavoring meat, especially for mutton and lamb. In barbecue and kebab, it can be usually used together with paprika, salt and pepper. The dry leaves and floral are most often used in Greece to add flavor to Greek salad, and is usually added to the lemon-olive oil sauce that accompanies many fish or meat barbecues and some casseroles.
