The flowers are produced very early in spring, before the leaves and are monoecious (separate male and female flowers on the same plant) with wind pollinated pendulous catkins. Male catkins are pale yellow and 2 to 3 inches long, while females appear in small, reddish, inconspicuous catkins. The fruit is an edible nut, produced in clusters of one to five together, each nut held in a short leafy involucre (outer fibrous husk) which encloses about three quarters of the nut. The nut is smooth, spherical to oval, 1 inch long and yellow-brown with a pale scar at the base. The nut falls out of the involucre when ripe, about 7 to 8 months after pollination. The seed has a thin, dark brown skin which has a bitter flavor and is sometimes removed before cooking. The nut is best kept by shelling and then freezing. Hazelnuts are a delicious nut for fresh eating, roasted, ground into a paste or as toppings in chocolate and ice cream. The hazelnut is both tasty and healthy.
