A tangine is a cooking vessel used to cook African cuisine in its base and the cone shaped lid fits onto the base creating a air tight seal and when cooked on low heat the steam inside the cone shape billows around and around cooking the prepared foods already in the base of the vessel. This tangine is from the country of Tunisia a country in Northern Africa and the tangine was designed in the country of France and outsourced to Tunisia where experienced, skilled, and talented ceramicists create these beautiful and excellent cooking vessels as they originated in Africa centuries ago. A tangine, like the one in this listing, is made from terracotta clay that has been glazed over during its first firing in a kiln at high temperatures. Afterwards the cone shaped lid is hand painted with ceramic china paint giving this vessel a multicolored polka dot pattern that also displays well as an accent piece in a kitchen on the counter, snack bar, or on a shelf or sideboard in the dining area when not in use. The underside of this nifty item is unglazed terracotta and raw terracotta is ideal for low heat cooking as the flame heats it evenly and the clay in terracotta absorbs heat easily. The tangine, in this listing, is safe for a gas or electric stove and will not perform on an induction heating element. In addition it would be wise to purchased a 'heat diffuser' at your local hardware store for a nominal fee. The diffuser is a perforated metal plate with a handle that fits on top of a gas flame or electric element and spreads the heat evenly across the underside of the tangine while cooking your favorite dish in it and my favorite African meal is Moroccan Chicken. There are numerous recipes online for you to choose from to make that dish of a lifetime to impress your social guests at your next dinner party. And you may remove it from the stove top and rest it on a trivet on the center of your dining, brunch, or buffet tables.
