It is most notable for its strong licorice-like smell and flavor. The leaves and flowers can be used in a number of edible goods.The strong scent of the plant also makes it ideal as a natural potpourri. This species of plant reliably and easily grows from seeds, and needs relatively little care or maintenance once established. It will grow in locations that receive full sun to partial shade. Anise hyssop tolerates a wide range of soil conditions, including low-nutrient soil, but it greatly prefers well-draining soil as opposed to constantly moist or waterlogged soils. It is relatively tolerant to drought conditions, although occasional, consistent watering will improve its performance. Agastache foeniculum can be grown very easily by pressing some of its seeds into a pot filled with quality potting soil outdoors in either winter or spring. The seeds need light to germinate, so it is not necessary to bury them. The seeds will germinate within two weeks to a month, depending on the temperature and moisture. Colder temperatures will increase the germination time. Once the seeds germinate and begin growing into seedlings, they can planted where desired in the garden. Very young seedlings may need extra protection from pests (e.g. slugs) and cold temperatures if planted out immediately. Alternatively, seeds can be winter-sown, or direct-seeded in the garden where desired, both with fairly good germination success. The seeds are very small, so direct-seeding into the ground may be a problem in areas where rain/watering could easily wash the seeds away from the intended growing area. Agastache foeniculum generally grows without issues and it can often be expected to set blooms in the first year. Specifically for the variety "Golden Jubilee," it is recommended to put the plant in a location where it gets some light shade, as the plant will have a darker pigment in response to large amounts of direct sunlight. In no way will the plant suffer from extra sunlight, but the intense yellow color that this variety is known for will not be a prominent. Harvesting is as easy as cutting a few leaves or flowers from the plant and using it however you'd like. When diced into small bits, the flowers make an excellent topping for summer salads. The leaves can be chopped and soaked in hot water for a mild tea. With a bit more processing, the leaves and flowers can also be used in products like jams and baked goods (e.g. cookies). The leaves and flowers can also be chopped and dried to make a seasoning for other foods. An added benefit to growing Agastache foeniculum is that it is very attractive to pollinating insects and birds. Bees and butterflies are especially drawn to the flower shoots. Birds will often pick at the flower head once it finishes blooming for the small seeds that it abundantly produces, or to eat the insects that are drawn to the nectar of the flowers. In this way, anise hyssop makes a great addition to a pollinator garden. Finally, Agastache foeniculum easily grows from seeds that drop from the flower stalks in the fall. In addition to being a (short-lived) perennial, it will often seed itself in the garden, providing even more plants for pollinators, produce and general enjoyment.
